A clear fluid secreted by the salivary glands into the mouth, and containing water, mucus and enzymes to lubricate food and break down starch into sugars. Saliva is a mixture of a large quantity of water and a small amount of mucus, secreted by the salivary glands. Saliva acts to keep the mouth and throat moist, allowing food to be swallowed easily. It also contains the enzyme ptyalin, which begins the digestive process of converting starch into sugar while food is still in the mouth.
