The term fattening (or “finishing”) is used to describe the process of bringing animals to an appropriate stage of body condition prior to slaughter for meat consumption. As the animal grows towards maturity the parts of the musculature that provide the most desirable cuts of meat tend to be late developing and the subcutaneous and visceral fat deposits increase more rapidly.
